1-1/4 c. dark brown sugar
1/2 c. butter, softened
1 egg
1 to 1-1/2 t. cinnamon
1 t. vanilla extract
1/4 c. whole milk
2 c. all purpose flour
1/2 t. baking soda
1 t. baking powder
1/2 t. kosher salt
1 packet instant maple brown sugar oatmeal-optional for topping
Preheat oven to 350 degrees. Spray loaf pan.
Place the bananas into zippered bag, seal and mash up them with your hands-set aside. In a mixer bowl place the butter and the brown sugar and mix on medium speed until light and fluffy, 1 to 2 minutes. Cut the corner off the bag and squeeze the banana into the bowl. Beat in the bananas, egg, cinnamon, vanilla, and milk until well combined. Mix all the dry ingredients together. Switch the mixer speed down to low speed and gradually add flour mixture mix until just smooth-about a minute. Pour batter into pan and top with the packet of oatmeal. Bake about 40 minutes checking center with a toothpick.
Note* You can use regular brown sugar in place of dark brown sugar. Also the oatmeal was too dry to stick much to the top of the bread next time I will try mixing it with some butter.
