Turkey Zucchini Boats

1lb. ground chicken or turkey
2 medium sized zucchini
1T. chopped green onion
1 t. cumin
1 T. oregano
1 T. basil
garlic salt
salt/pepper to taste
Mrs. Dash-salt free table blend-to taste
4 oz fat free cheese
Directions:
Preheat oven to 350 degrees. Peel the zucchini then cut one in half from top to bottom. with one set of halves, scoop out the seeds from each side forming boats. Put on sprayed baking sheet and pop into oven for 10 mins or until softened. You can use the microwave instead for 2 to 3 mins. Dice the 2nd zucchini.
Spray saute pan with olive oil cooking spray. Toss in the diced zucchini, garlic salt and pepper and basil. You can add in other veggies to steam cook. Saute until softened scoop out and set aside. In the same saute pan re-spray and toss in turkey/chicken, cumin and salt and pepper to taste. Once the meat is cooked de-glaze the pan with 1/4 c. water-scraping the browned bit from the bottom of the pan and stir the meat until water is fully absorbed.
Seperate the meat in half. Grate cheese and line the boats with a little in each. Mix each halved portion of meat with half the veggie mixture and top the boats. Top that with a sprinkle of cheese. Bake until cheese is melted. Serve with a drizzle of BBQ sauce.
