1-1/2 c. sugar
2 eggs
2-1/2 c. creamy peanut butter
1 t. vanilla
3 c. flour all purpose
1-1/2 t. salt
1 t. baking powder
1-1/2 c. jam {i used strawberry/raspberry}
1 c. peanuts, chopped
Preheat oven to 350°. Grease a 13x9 in. pan. Cream butter and sugar together until fluffy. Add eggs and peanut butter until combined, about 2 mins. Whisk together dry ingredients, adding to the butter mixture until just combined. Add vanilla.
Transfer 2/3 of the mixture to the pan spreading evenly. Top with jam and spread to coat. Crumble remaining peanut butter mixture over top the jam. Sprinkle peanuts on top.
Bake until golden brown, 45 to 60 mins. You may want to tent with foil halfway to avoid the topping browning to much. Allow to cool for a few hours before cutting.
