Crepe Ingredients:
4 eggs
1/2 Cup milk
1/2 Cup water
1 Cup flour
1/2 tsp. salt
2 Tbsp. melted butter
1 Tbsp. Sugar
1 tsp. vanilla
Toppings:
Pie Filling
Cool Whip
Powdered Sugar
Directions:
Mix all ingredients with a hand mixer for 2 minutes. Heat a skillet, that has been sprayed with cooking spray, over medium heat. Pour a small amount (the amount depends on how thick you like your crepe) into skillet and cook for 30 seconds to minute, until golden brown. Flip when the top is rubbery to the touch. Cook for another 30 seconds to a minute. Remove from pan and assemble with your favorite toppings. ***We assemble ours by putting pie filling and cool whip in the center, folding in half or rolling into a "burrito" and topping with more pie filling, cool whip and a dusting of powdered sugar.
