Cookie Pizza

1/2 c. packed brown sugar
1/4 c. sugar
1/2 c. butter, softened
1 t. vanilla
1 egg
1 1/2 c. AP flour
1/2 t. baking soda
1 c. jelly beans or chopped apricots and toasted coconut
{1 c. combined of above}
1/2 c. white chocolate chips or up to 4 bars ghirardelli vanilla dreams bars
1 t. shortening

Heat oven to 375 degrees. In a large bowl, mix sugars, butter, vanilla and egg with a spoon. Stir in flour and baking soda-dough will be stiff. In ungreased 12 inch pizza pan, spread or pat dough out. Bake 10 minutes. Sprinkle toppings on and bake for another 8 to 10 mins. Cool in pan for 30 minutes. Place chocolate and shortening in small zippered bag, seal and microwave for 1 minute on high. Squeeze bag until chips are melted and smooth. Cut off corner of bag; drizzle melted chips over cookie. Let stand another 30 minutes or until set. Cut into wedges to serve.
