1 lb Lo Mein (or use authentic Japanese noodles)
1 Head Bok Choy, cleaned and sliced
1 red onion, oriental cut
3 cloves of garlic chopped
1 cup of snow peas
1 cup of bean sprouts
1/4 cup shredded carrots
1/4 cup scallions, sliced
1/2 cup baby corn
1 cup shitake mushrooms, sliced
Note: you can remove or add any of the vegetables.
2 Tbsp Sesame oil
1/4 cup oyster sauce
2 Tbsp Soy sauce
1 tsp brown sugar
1/4 tsp red pepper flakes
Mix all the ingredients for your sauce except for the sesame oil. If you are using frozen Lo Mein thaw with warm water or if its dry cook it now according to instructions and set aside.
Add your sesame oil into a large saute pan or wok. Add the onion and garlic and stir fry for a few minutes until onions begin to cook. Add in your bok choy, stir to coat in oil and allow to soften up just a bit.
Now that the veggies have begun to cook, add in everything else and coat with the oil and stir fry until they are just barely cooked. You want as much crunch as you can from your veggies without them being raw.
Add in your sauce and continue to get hot, then mix in your cooked Lo Mein and serve immediately. You can also coat your Lo Mein with the sauce and serve your stir fried vegetables over top of the Lo Mein.
