Tomato Bread Salad

4 medium roma tomato, cut into 1-inch chunks
1/2 of a medium red onion, cut into thin wedges
1 medium yellow sweet pepper, cut into 1-inch pieces
1/4 c. olive oil
1/4 c.red wine vinegar
1 T. Dijion mustard
1/2 t. Italian seasoning, crushed
8 oz. ciabatta or focaccia bread, cut into 1-inch pieces
1T.olive oil
1 c. small fresh basil leaves
white cheddar cheese shavings-optional

Chop Roma tomatoes, yellow pepper, and red onion, toss into a large serving bowl. In a screw top jar mix dressing ingredients:olive oil, red wine vinegar, dijon mustard, Italian seasoning, and salt, pepper. Shake well- add to the veggies, stir to coat. Refrigerate over night.I didn't do this part because I didn't read all the way through the recipe;)Pre-heat the oven to 400 degrees. Cut up the Ciabatta bread into cubes place on baking sheet and drizzle with olive oil-toss to coat. Bake about 7 to 10 mins, stirring once. Remove and cool-then add to the tomato mixture, along with the basil. Toss to coat and top with the shaved white cheddar cheese.
