Meatball Subs

Ingredients for Meatballs:
1/2 lb ground beef
1 tbsp garlic, chopped
1/2 cup panko bread crumbs or Italian bread crumbs
1 tbsp Italian seasoning
2 tbsp finely chopped fresh parsley leaves (or 1 tbsp dried parsley)
2 tbsp grated Parmesan
1 egg
salt and freshly ground black pepper
2 tbsp canola oil
1 cup pizza sauce, recipe follows
1/2 cup shredded mozzarella

Directions for Sub:
2 sub rolls

Preheat oven to 400°. For meatballs, in a large bowl mix together all ingredients (including beef), except the canola oil, tomato sauce and mozzarella, until well combined. Using wet hands, form walnut-sized pieces into balls. Heat the oil in a medium skillet over medium-high heat and fry the meatballs until browned on all sides.

Slice the rolls in half lengthwise and put on a baking sheet. Top each half with half of tomato sauce, meatballs and some mozzarella cheese. Put in the oven and bake for 10 minutes or until the cheese is melted. Transfer to a serving platter and serve.

Yields 2 subs.

Pizza Sauce:
2 tbsp olive oil
1 garlic clove, crushed
1 (28-ounce) can tomato puree
1 tsp dried marjoram
1 tsp dried basil
salt and fresh ground pepper, to taste

Over medium heat, heat oil in a saucepan until hot. Add all ingredients, cover and bring to a boil. Uncover, lower heat and allow to simmer for 30 minutes.
