1/2 cup butter
2 cups crushed Oreos
1/2 cup milk
24 large marshmallows
1 tsp mint extract
1 cup whipping cream (or about 1 small container cool whip)
1 box chocolate pudding (prepared according to pkg directions)
Melt butter in small saucepan over medium heat. Remove from heat. Add Oreo crumbs. Stir well. Reserve about 1/4-1/2 cups for topping. Press crumbs firmly in bottom and up the side of a 9-inch pie plate. Chill.
Heat milk in large heavy saucepan on medium-low heat until hot, but not boiling. Add marshmallows. Heat and stir until melted. Cool, stirring occasionally.
Stir in mint extract.
Beat whipping cream in medium bowl until soft peaks form. Fold into marshmallow mixture. Fold prepared chocolate pudding into mixture. Spread evenly in crust. Sprinkle with reserved crumbs. Chill.
