Sausage Stuffed Meatballs

1 lb. chicken sausage
2 to 3 T. chopped red onion
Italian parsley
salt and pepper to taste

Mix all ingredients together and roll into balls. Heat olive oil in dutch oven or heavy pan.
Press mozzarella into each meatball and cover completely with meat. Place into heated pan and brown on all sides. Cover with sauce and simmer until cooked through.
